The de Buyer pans contain a high carbon content. This allows the pans to last a lifetime, provided you take good care of them. Like all de Buyer pans, the pan must be seasoned first. Read below how to do this best. Before you can use a de Buyer steel pan, you must first season it to create a non-stick layer. To season the pan, you need a type of oil, but olive oil does not work well, as it cannot withstand high temperatures. Place the pan on the stove and heat it on low heat. Pour a generous amount of oil into the pan and let the pan heat up slowly. When the oil starts to smoke, remove the pan from the heat and let it cool down. Then wipe off the excess oil from the pan with kitchen paper. Repeat this process two more times to create a good non-stick layer.
